Preheat the oven to 220 °.

Cut the onions into thin strips, and place them on the roast, salt, pepper, 2 tablespoons of oil, a knob of butter.
Bake for 30 min, then when the onions have browned well, add 2 tablespoons of veal stock, diluted in a glass of warm water.

Return to the oven for 5 minutes and add the cut tomatoes cut into strips and the mushrooms cut into strips or in quarters if they are small.

Cook for about 1 hour and 15 minutes, basting the roast regularly.

It's ready when the sauce is all concentrated and the tomatoes and mushrooms are almost candied.
